Meal Plan 8/7/11

Back from the Living Dead

or what felt like it, anyway. Last Tuesday R2 started vomiting at 11 pm and didn’t stop for 18, yes EIGHTEEN, hours, my poor sweet baby. At 4:45 R3 woke up and vomited for 2 hours and then slept, woke up and was fine. When R2 finally stopped she had what seemed like the flu. Cough, fever, exhaustion. Then Friday I started feeling a bit bad. Saturday I couldn’t get out of bed and R3 joined me.

Fast forward over a week and two doc visits later and today R3 and I are slightly better – after starting antibiotics.

I have so much to do. We cancelled the birthday party for the third Sat in a row. *thud* And I have to bake goodies with 3 gallons of blueberries we picked that Tues R2 started puking!

Feb Meal Plan #1

Pacific Chicken (NT 25) over rice, broccoli on side
Salmon Patties (NT 25), sweet potato fries
Chicken and Broccoli Quinoa (NT 27)
Roast
CP Beef and Chicken Fajitas
Chili Maple Chicken (NT 30) w spinach salad
Apple and Maple Chicken (NT 24), mixed veggies

I made up a soft bread dough, and spread out a tennis ball size glob out, fit in a double handfull of filling, and then pinched the sides up around it in a canoe shape, and then baked.

Here’s the filling, approx, since I didn’t measure anything:

6 cups rough-chopped spinach
1-2 sliced red onions
3-4 chopped garlic cloved
1 1/2 cup small cubed feta cheese
1 cup grated cheese
generous amount of olive oil
salt and pepper to taste

Mix together, fill dough, bake, etc. Yum!
